USC played at Stanford on Saturday September 6th so Eric's USC crew showed their pride and came for the game. We hosted the whole gang at our house and we were so excited to have them. Dave and Samantha drove up from San Pedro, Jeremy and Karen flew in from Hermosa, Joe and Katie drove down from Eureka, CA and Jane and Brian came down from Oakland. We even had furry fans, Abe the lab and SoCal Harvey join us. Everyone but Jane arrived on Friday night and on Saturday morning we were up bright and early in time to stop at the grocery for bbq stuff and make it to Stanford's tailgate lot in time to get a great spot in the USC section. I'd make Ms. Byrdie's egg quiche the night before and popped it in the oven before we left so we even had breakfast to tailgate with before lunch time rolled around.
Here is the link to the photos from the day and Ms. Bydie's Casserole recipe.
Green Chile & Egg Breakfast Casserole
10 eggs
1 pint small curd cottage cheese
½ cup melted butter (1 stick)
½ cup unsifted flour
1 lb. shredded Sonoma Jack or Monterrey Jack cheese
1 tsp. baking powder
½ tsp. salt
2 cans (4 oz. each) diced green chilies
Preheat oven to 350. Beat eggs and add remaining ingredients. Bake in buttered 9” quiche dishes or 9” x 13” Pyrex baking dish for 35 minutes or until eggs are firm and inserted knife comes out clean.
